Vegetable Rice Noodles Recipe

Ingredients per person:

  • Oil
  • 1 onion
  • 1-2 tsp minced garlic
  • 150g fresh rice noodles (check packaging if you need gluten free. some contain wheat starch.)
  • 1-2 cups frozen mixed vegetables
  • Soy sauce (again check it’s gluten-free if necessary)

Method:

  1. Heat a wok over medium-high heat.
  2. Pour in just enough oil to cover the bottom.
  3. Cut onion into smallish wedges.
  4. Fry onion and garlic until translucent and soft (or how you like them).
  5. Microwave frozen vegetables according to directions on packet or until hot.
  6. Mix vegetables into the wok and stir until everything is mixed up nicely.
  7. Microwave rice noodles until hot.
  8. Stir rice noodles into wok.
  9. Add a few dashes of soy sauce to your liking.
  10. Mix some more.
  11. Eat and enjoy!

Variations:
Add leftover cooked meat or scrambled eggs.
If you have fresh vegetables on hand, dice or slice and add ‘em. Make sure to cook for longer until the vegetables are softened.
Add sesame seeds with the onion and garlic.

Actually, this recipe is easy to experiment with. Just chuck whatever you like in the wok and cook until everything is hot. Yummy!
